The Ash Tree Ballywilliam is back serving the public, just not in the way it used to. Alison Diskin has brought the old Ashtree pub back to life, transforming the long-closed venue into a full-time food and social spot that now opens seven days a week. She’s teamed up with head chef Tom Dunne, Helena and Christine in the kitchen to offer a modern gastro-style menu with Italian influences….pasta lasagna, and a full breakfast menu sourced locally, including meats from Tomas Kinsella at Butchers Best. Alison made it clear, this isn’t just a place to eat or drink she wants it to be a space for the community to gather again. With a bar team including Mark, Abby, Laura Lynn, Claire, Hannah and Brendan, the focus is on local faces, stories, and a place where people want to spend time.
The beer garden has been completely redone to hosts private events, parties, and regular live music, including a monthly trad night.
